재료[Ingredients]:
배추 1통 1200g
굵은 소금 3 Tbsp
배 1/2개
고추가루 6 Tbsp
액젓 2 Tbsp
새우젓 1 Tbsp
꿀 1 Tbsp
마늘 2 Tbsp
생강 1 tsp
양파 1/4개
파 4-5대
만들기[Instructions]:
배추 잎을 떼어 먹기 좋은 크기로 썰어 소금에 1시간 정도 절입니다
배추가 절여지는 동안 배즙에 고추가루 넣어 잘 풀어지게 둡니다
한시간 후 절여진 배추는 깨끗이 씻어 물기를 뺀 후
모든 재료 넣고 버무린 후 통깨 뿌려 완성~
[Ingredients]
* 1 small about 2.6 lbs baechu (Korean napa cabbage)
* 3 tablespoons coarse sea salt
* 4-5 scallions
* 1/4 onion
[Seasoning]
* 6 tablespoons Korean red chili pepper flakes (gochugaru)
* 1/2 Korean pear, squeezed to pear juice
* 2 tablespoons fish sauce (myulchi aekjeot)
* 1 tablespoon honey
* 1 tablespoon salted shrimp (saeu-jeot)
* 2 tablespoons minced garlic
* 1 teaspoon finely grated ginger
* sesame seeds
[Instructions]
*Separate the cabbage leaves. Cut each leaf lengthwise, and then cut crosswise into long bite sizes.
*Place a layer of cabbage in a large bowl and sprinkle with salt. Repeat with the remaining cabbage and salt. Toss well to coat evenly. Leave it for about 1 hour until softened, tossing once halfway through.
*Roughly chop the scallions. Cut the onion into about 2-inch lengths.
*Combine all the seasoning ingredients in a small bowl, and mix well.
*After one hour, rinse the salted cabbage 2-3 times and drain well.
*Add the seasoning mix to the cabbage. Toss everything until the cabbage pieces are well coated with the seasoning. Add the scallion & onion. Top it off with the sesame seeds.
